Chia seeds are a nutrient powerhouse, boasting of Omega 3's, anti-oxidants, fibre, vitamins and minerals. They are beneficial for lowering inflammation, improving skin, regulating blood sugar, supporting digestion and cardiovascular health. This recipe is one of my favourite ways to enjoy them.
1/4 c chia seeds (I prefer white)
1 cup unsweetened nut milk of your choice or coconut milk
1 teaspoon vanilla extract
1 tsp raw honey (optional)
Sprinkle ground cinnamon
PREPARATION TIME: 15 minutes
1 In a bowl, stir together chia seeds, milk, vanilla, honey and cinnamon. Allow to sit for 15 minutes or even better refrigerate overnight.
2 The chia seeds will expand and absorb the liquid creating a chia pudding.
5 Top with your choice of nuts, seeds, and berries. Enjoy
