Gooey Tahini Blondie Bars


These bars are loaded with beneficial nutrients including B vitamins, liver-loving lecithin, anti-oxidant rich vitamin E and minerals including calcium, magnesium, phosphorus, potassium, manganese, molybdenum, iron and zinc. Additionally, the high protein and fibre content helps to stabilise blood sugar making them the perfect afternoon snack to keep you energised and focused without the dreaded sugar crash you get with traditional blondie bars. The best part is, they taste just as amazing and gooey as the originals!

Ingredients:

4 Tbsp grass-fed butter or coconut oil

1 can cannellini beans, rinsed and drained

1/2 c white tahini

1 tsp vanilla

2 organic cage-free eggs

2/3 c coconut sugar

1 tsp aluminum-free baking powder

1/4 tsp sea salt

1/2 c dark chocolate chips

Method:

Heat oven to 175 degrees C/350 degrees F. Grease an 8x8 inch pan with butter or coconut oil. Add all ingredients except chocolate chips to food processor and blend until no chunks remain. Stir in chocolate chips and pour in pan. Bake for approx 35 minutes until top is golden brown. *If using convection oven cooking time will be less. Let cool on wire rack. Slice and enjoy! If these are not eaten right away store in refrigerator for up to 3 days.
