Asian Turkey Meatballs
These meatballs are the perfect snack to have on hand over the weekend. The nutrient content of this recipe is taken to new heights with the addition of shiitake mushrooms. An excellent source of copper and B vitamins, shiitake mushrooms have also been shown to have anti-oxidant, anti-inflammatory and anti-cancer properties. Recent research has shown that a relatively small amount of shiitake mushrooms per day, the equivalent of one medium mushroom can provide significant anti-inflammatory benefits. This makes it super easy to add this health supporting food into your diet!
Method:
1.5 lbs/1 kg ground turkey
4 spring onions, washed and finely chopped
4 shiitake mushrooms with stems removed, washed and finely chopped
2 Tbsp tomato puree
2 Tbsp gluten free soy sauce
4 tsp toasted sesame oil
2 cloves garlic
1/2 tsp sea salt
1/4 tsp black pepper
splash of your favorite hot sauce or siracha (optional)
Preheat oven to 375 F/190 C
Mix all ingredients together in large bowl
Form meatballs into 1 in round balls and place in greased baking dish. Bake for 20-25 minutes or until lightly browned.
Can serve wrapped in lettuce leaves or with a side of steamed boy choy or leafy greens.
Excellent drizzled with your favorite hot sauce.
